DIY: Blackberry Peach Dessert


My parents ran by the house to drop some stuff off on their way to Altus. As a wonderful addition, they brought along with them a box full of some AMAZING local peaches. See?

So, the question became, what am I going to do with all of them?!

Well, this recipe that I adapted from the OSU Agricultural Center handouts from the Farmer’s Market on Cherry Street answered it. It was such a wonderful answer that I have already made it twice in a week because the hubby loved it so much!

Not to mention, it’s actually pretty health for a dessert….minus the ice cream part….

Blackberry Peach Dessert

3/4 Cup Flour (Divided!)
1 Cup Oats (I used the quick Quaker oats.)
1 Cup Brown Sugar (I only kind of packed it.)
1/2 Cup Butter (1 stick)
3 – 4 Cups Blackberries*
2 – 3 Cups Peaches*

*You can substitute just about any fruit and any amount, just as long as it fits in your pan!!!*

Spray your square pan.
(Mine is a 9 in. X 9 in.)

Wash off your blackberries and drain them well.
(If you’re in a hurry, paper towels can help that along.)

Set your oven to 350F.

Combine 1/2 C Flour, Oats, and Brown Sugar.

Use a fork (or one of those fancy pastry cutters if you are so inclined) to cut in your fairly cold butter.
It should look like this when you’re done.

Toss your drained blackberries with the remaining 1/4 C of Flour and put them in your sprayed dish.

Slice your peaches and place them on top.

Spread the topping evenly then put it in the oven.

35-45 minutes or until you see the color golden brown that you like and the blackberry juice in the bottom is bubbling!

Be patient!

It’s worth the wait!!! (Look how the fruit just migrates to it naturally…)

Serve it up with some ice cream and you’ll be wishing summer would stay a little longer!!!
